Lotte Bjerre Knudsen arrives for lunch on foot and in a blaze of colour. I spot her mane of red hair and oversized glasses a mile off as she strides at a cracking pace along Sydney’s historic Finger Wharf in Woolloomooloo.
“Got to keep your steps up,” says Knudsen, 62, as she asks if we can switch tables to get out of the blazing Sydney sun.
