A lamb curry traybake may be just the ticket for a snugly autumnal evening, and Jamie Oliver has provided an incredibly straightforward recipe that can combat any hesitations about the time and effort often associated with making curry at home. All it takes is assembling the ingredients in a tray before letting them slowly roast to perfection.

Whip up Jamie Oliver's lamb madras curry traybake

Ingredients (for eight servings)

  • One lamb shoulder with the bone in (2kg)
  • One jar of Madras curry paste (180g)
  • 250g of yellow split peas
  • Four red onions
  • Four tomatoes
  • One potato
  • One piece of ginger (six-centimetre piece)
  • One bulb of garlic
  • Half a bunch of coriander (15g)
  • 12 cloves
  • Olive oil

The Cooking Method:

First, preheat your oven to 170C or Gas Mark 3, and bring water to a boil in the kettle.

Score shallow criss-cross patterns across the lamb and coat it with seasoning and half the curry paste.

Scatter yellow split peas into a large, deep roasting tray. Prep your onions, garlic bulb, tomatoes, potatoes, coriander, and ginger by peeling and chopping them up.

Combine these vegetables in the tray with the remainder of the curry paste. Mix in 1.2 litres of hot water from your kettle and nestle the seasoned lamb atop it all.

Cover the tray tightly with tin foil that's been coated in olive oil, then pop it into the oven. Allow the tray to toast for four and a half hours until the lamb is incredibly tender.

Once the time has elapsed, take off the foil and baste the lamb with the juices from the tray, then let it cook for a final 30 minutes until the meat turns golden.

When the lamb is done, remove it from the oven, pull the chunks of meat off, and discard any bones. Break up the potato and mix it through the vegetables.

Your delicious lamb madras curry is now ready to be served.
