To make Mary Berry's sausage hot pot stew follow these steps, reports the Express.
Ingredients
- Your preferred sausages
- 1 large onion
- 2 cloves of garlic, crushed
- 2 medium carrots
- 2-3 medium potatoes
- 1 large red pepper, deseeded
- 6 slices of bacon
- Cooking oil
Instructions
1. Begin by prepping your ingredients: slice the onion, carrots and potatoes, and chop the bacon.
2. Heat a large frying pan with oil over high heat. Add the sausages and cook until browned on all sides, then set aside. Next, cook the bacon until crispy, then set it aside as well.
3. Toss the onion, pepper, carrot and garlic clove into the frying pan and give it a good sizzle for five minutes on high heat.
4. Then, splash in the chicken stock, chopped tomatoes, sun-dried tomato paste and a sprinkle of thyme into the pan. Crank up the heat until the mixture starts to bubble, then toss in your potatoes.
5. Once it's boiling, dial down the heat to a simmer, season with salt and pepper and then pop both the bacon and sausages back into the pan.
6. Slap on the lid and let it bubble away for around 20 minutes, then whip off the lid and let it cook for another 10 minutes until both the sausages and veggies are tender.
7. Your scrumptious one-pot sausage feast is now ready to be devoured. Mary suggests serving it up with your favourite greens for a healthier and tastier dish.
